I'm making two cakes for a friend's Birthday party today...ones baking in the oven now...yummmm... The smells, of carrot cake, spices, and cinnamon fill the room...It's even better than a Yankee Candle!! I so need to find my recipe book, the one I've had since I was 15... it has years of tried and true recipes, and it's just gone...now every time I find a great recipe I loose it, or it goes by the wayside, because I don't have a proper place to put it. Carrot Cake's are difficult to make but once there done, boy are they yummy!! This one is from scratch with homemade cream cheese coconut icing. Supposedly this recipe is super moist, well, we will see about that...
